Scallops with Zucchini

Another one of those long weekends that I look forward too, I had  the luxury of time to cook scallops.

I just came by one pack of fresh scallops from Farmer’s Market and the zucchini I had from SM Hypermarket. I have no exact measurements of the ingredients though as I just mixed whatever I thought would make it taste good :-)


Ingredients:
scallops, removed from shell
olive oil
grated parmesan cheese
zucchini, cored and diced
minced garlic
salt and pepper, to taste

Preparation:

Heat pan, pour in some olive oil. Add in minced garlic, scallops, salt, pepper to taste. Cover for a few minutes to allow the seafood to cook and let out the flavor.

You will notice that the scallops would enlarge after sometime, this is an indication that you can lower or turn of the heat.

For a richer flavor, you may add grated parmesan cheese. Serve hot.

Just took some pieces and put them under a griller…
