Stewed Chicken in Coconut Milk

Chicken Stew or Ginataang Manok in Filipino

 

Ingredients:
1 pc whole chicken, cut into pieces
½ cup Doña Elena Pure Olive Oil
1 T garlic, minced
2 T ginger, julienne
1 pc red onion, sliced
2 pcs green chili (siling haba)
500 ml coconut milk
20 g chili leaves (dahon ng sili)
To taste salt
To taste pepper

Procedure:
1. Heat the Doña Elena Pure Olive Oil in a sauté pan and sauté the onions, garlic, and ginger until aromatic.
2. Add the chicken pieces and sear on all sides.
3. Add the coconut milk and green chilies and let simmer until chicken is well done.
4. Five minutes before chicken is cooked, add the chili leaves and season with salt and pepper.
5. Serve with white rice.

Serves 6 persons
