Recipe: Prawns in Aligue Sauce

Another experimental recipe is this Prawns with Crab Fat (Aligue) sauce.

 

With lots of garlic sauteed in oil, I added aligue to the sauce consistency I like (about 3 tablespoons) and half a cup of water.  

Add salt and pepper, a teaspoon of hot sauce and dash of ground dried basil leaves then stir. Mix in the Prawns until coated with sauce. Cover until prawns are just about cooked. Turn of heat not removing cover for about three minutes (this is because the remaining heat will fully cook the prawns).

    Gosh Zes, this recipe reminds me of my favorite dish at Recipe by Cafe Metro. I’m an addict to their prawns with aligue to the extent that I don’t eat there if the dish is not available.
