and to add…adobo represent Filipinos in many ways – well, given that it’s literally brown, it is uncomplicated – simple ingredients and easy to cook but very flavorful, and you can leave your adobo in the fridge and reheat it again and again and it will even taste better! i also have a friend from the Visayas region who cooks adobo with ginger and it is actually good . you can have it dry, flaked, sauce-y but in the end, you will still call it adobo!
