I’ve been reading lots of cookbooks recently, which inspired me to try and become a healthy eater. I’m a carnivore so salads I usually eat for dessert, something very normal here in Manila like fruit and macaroni salads.
So here for lunch, I went around Burgos Circle and my feet brought me to Coffee Bean and Tea Leaf where I ordered Chinese Chicken Salad (Php 168).
It was a bowl full of leaves… as expected
but at the back of my mind I was already thinking if I can survive the afternoon with just salad. For someone used to eating lots of rice, salad is something extraordinary. Surprisingly after finishing the whole thing, I am full and seems that eating salad is good after all.
It helped that there were chicken strips, lots of almonds, fried wanton wrappers, and an oriental dressing to give it more Asian taste. Not bad for a first-time-salad-only-for-lunch eater.

With all the cholestererol-full of foods that we were preparing for the Holidays, it came to my mind to prepare something that is seemingly healthy – a vegetable salad. A Kani Salad.
So how I did it? No cookbooks, just from the memory of how Kani Salad looks like in Japanese restos…
